What will it be able to do?

Look up bookings, customers and revenue, create discount codes, and draft emails to customers. It will act only when you ask it to.

Will it see things my staff shouldn't?

No. It will work inside each person's role and permissions, so it can only see and do what the person asking could already see and do.
